This Week's Menu

Ahh, August. A time of...new beginnings? Changes? Sure, why not.

I decided (for a number of reasons) to eat entirely vegetarian for the month of August. However, I'm currently struggling with an entire month's worth of vegetarian meals because, well, I don't have a huge vegetarian repertoire. Thus, you're getting a week of food right now and maybe I'll give you another week next Monday.

Monday, 8/1: Greens sauteed with garlic and olive oil, rice and salad.
Tuesday, 8/2: Grilled fish, potato salad and broccoli.
Wednesday, 8/3: Bean sautee over rice.
Thursday, 8/4: Stir fried veggies over rice noodles.
Friday, 8/5: Lentil and barley shepherd's pie (cause I didn't make it last week).
Saturday, 8/6: Polenta and salad.
Sunday, 8/7: Curried beans over rice.

What are you making this week? Any exciting ideas for me?

  1. I've got a lot of vegetarian recipes on my blog: http://www.anktangle.com/search/label/vegetarian%20recipes if you want to scroll through those and see if there are any that would suit your family! ...But Amanda, I don't think fish is vegetarian...just sayin'. :-P

  2. I've also got a few vegetarian recipes on my blog, but these days most of my 'standard' recipes live only in my head. I also find a lot of good new recipes from online searches for specific ingredients that I'm looking to use. Sometimes I even find a non-vegetarian recipe that sounds good and I just edit it a bit to make it vegetarian/vegan.

Here are a couple ideas to help stir your creativity: lentil and rice taco filling, stuffed summer squash, stuffed cabbage rolls (or collard rolls!), ratatouille over polenta or pasta, eggplant parmigiana, black bean enchiladas, bean chili, rice noodles and veggies with peanut sauce (Thai sytle), Indian daal, falafel and hummus.

There are so many delicious and creative vegetarian options out there! Don't be afraid to experiment!

  3. Har har har Amy!!!

Thanks Shana! Those are great suggestions!! (And I guess thanks Amy too...)

  4. I wouldn't konow where to start either but I'm sure there are tons of blogs and sites out there that cater to vegetarianism, you just have to find them! I think I'd have to sneak a fish or two in myself if I ever decided to try this myself. ;)

  5. Yup, that's my problem, Rosie. There are still a lot of things I don't eat (though I am trying very hard to like a lot of things I used to dislike), so I want to make sure I'm getting enough protein, through foods. Thus, the occasional fish or shrimp is still in my repertoire.
